Prebiotic pasta may help control blood sugar levels

Consuming prebiotic enhanced pasta may prolong the emptying of the stomach and consequently, ease the rise in blood sugar levels after meals. The study, appropriately, undertaken in Italy showed that the consumption of the inulin enhanced pasta for five weeks exhibited significant improvements in blood sugar control. The randomised double-blind crossover study observed twenty healthy young men of an average age of 19, each volunteer was assigned to receive either normal or inulin enhanced pasta for five weeks. After the initial five weeks, the volunteers returned to their normal diet for eight weeks, this was then followed by a cross over to the other study group. The results of the study showed that when the volunteers received the prebiotic enriched pasta, they produced significantly higher levels of the gut peptides linked to the emptying of the stomach, compared to when they consumed normal pasta. The Italian researchers consequently observed a reduction in the rate of gastric emptying. The research team concluded, "The results are promising and encourage further research in this direction in the form of studies on both larger healthy populations and patients with metabolic syndrome, over longer periods of time."
