Lactobacillus is a genus, or family, of bacteria including species such as acidophilus or rhamnosus. Species of the Lactobacillus genus naturally tend to reside in the small intestine. Lactobacilli produce lactic acid and are key in the production of fermented foods such as yoghurt and cheese.
